3 cups sliced fresh peaches
1 cup sugar
1/4 tsp. almond extract
1 tblsp. lemon juice
1 tsp. lemon peal
1 1/2 cups plain flour
3 tsps. baking powder
1 tblsp. sugar
1/2 tsp. salt
1/3 cup shortening
1/2 cup milk
1 well-beaten egg
2 tblsps. sugar

Directions:

Arrange peaches in greased 8x8x2" pan. Sprinkle with mixture of 1 cup sugar, almond extract, lemon juice and lemon peel. Heat in preheated 400º oven while preparing shortcake.
Sift together flour, baking powder, 1 tblsp. sugar and salt. Cut in shortening until mixture is like coarse crumbs. Add milk and egg at once. Stir until flour is just moistened.
Spread dough over hot peaches. Sprinkle with 2 tblsps. sugar. Bake 35-40 minutes.
