Bearnaise Sauce Recipe

1 cup plus 1 T butter - cut in cubes
3 T shallots
Salt and pepper
2 T Champagne vinegar or white wine vinegar
2 egg yolks
1 T lemon juice
I T tarragon

Directions:
Directions:
Melt 1 T butter, add shallots, then stir in vinegar. Reduce heat to low and cook about 5 minutes more. Let cool.
Melt remains butter. Put egg yolks, lemon juice and 1 T water in warm, dry blender. Purée. With blender running, slowly pour warm butter in. Continue blending until a creamy sauce forms, about 2 minutes. Stir in shallots and tarragon. Season. Can be made 1 hour ahead. Cover and let stand at Room temperature.
