2 Cups White Long Grain Rice
3 Cups Water
¾ Tbsp Salt
¼ Tbsp Ground Pepper
2 Tbsp Butter
1 Ham Hock
3 Tbsp Olive Oil

Directions:
Directions:
In a medium to large pot combine olive oil and butter. Heat ham hock in butter/oil mixture. Add rice and mix to make sure rice is coated with oil/butter mixture. Add water, salt and pepper. Bring to a boil then reduce temperature to medium and let most of the water evaporate. When rice has a little bit of water left, reduce temperature to low and mix rice to avoid bottom burning. Cover and cook for 20 minutes. If too dry, add little bit of water. If too wet, put a napkin on top of rice and cover for about 10 minutes.
