1 slice (or more) of bacon
1 tsp. canola oil
1 medium yellow onion, chopped
1 small red cabbage (1¼ lbs), cored and thinly sliced
1/4 c. cider vinegar
2 granny smith apples (or other type), cored and diced to about ½-inch pieces
¼ c. water
3 tbs. maple syrup
¼ tsp. salt
¼ tsp. black pepper

Directions:
Directions:
1) In a large pan over medium heat, cook the bacon in the oil, stirring occasionally until the bacon is crisp and brown (about 5 minutes)

2) Add the onion and cook, stirring occasionally until golden (about 5 minutes)

3) In 3-4 additions, stir in the cabbage, sprinkling each addition with a tbs. or so of the vinegar

4) Stir in the apples, water, maple syrup, salt, and pepper

5) Reduce heat to medium-low and cover tightly

6) Cook, stirring occasionally, until the cabbage is very tender (about 1 hour). If the liquid cooks away, add a couple of tbs. of water

Personal Notes:
I have used honey in place of the syrup, and ham in place of the bacon. Also, I have turned the heat up and added more vinegar and water to help it cook faster when I need this to take less than an hour to make. If I need more liquid, I usually add some more water, and a little more vinegar to help balance the flavor.
