Ingredients: 7 lbs. green tomatoes or cucumbers, thinly sliced 3 cups pickling lime 2 gallons water 5 pounds sugar 3 pints white vinegar 1 teaspoon each: whole cloves, whole allspice, celery seed; 2 or 3 sticks cinnamon

Directions:Day 1: Dissolve lime in water; pour over sliced cucumbers or green tomatoes and let soak for 24 hours.
Day 2: Drain and rinse cucumbers or tomatoes; soak in fresh water for 4 hours, changing water every hour, draining well each time. Combine sugar and vinegar in a large stockpot. Tie all the spices together in a spice bag and drop in the vinegar solution. Bring to a boil, pour over tomatoes and let stand 12 hours.
Day 3: Boil cucumbers or green tomatoes in solution for 1 hour. Remove spice bag. Pack and seal in clean, sterilized jars. Process in boiling water bath for 10 minutes. |

Notes: Note: Cucumbers or tomatoes may be used in this recipe. If you use tomatoes, be sure they are green all the way through ( no pink liquid inside). You may vary spices according to taste and can use powdered spices instead of whole ones, and omit the bag; however, the finished product will be cloudy. Keep the lime soaking tomatoes in the refrigerator during the 24 hour soak for a crisper pickle.
I have never put my tomatoes or cucumbers in the refrigerator while soaking in the lime water and I get a nice crisp pickle slice.
