8 cups broccoli florets (from about 2 broccolis)
6 T olive oil, divided
4 cups leeks (white and pale green parts from 3 large leeks) - chop, wash well and dry
6 T almond flour
3 large eggs
1/2 cup fresh parsley, chopped and divided
1/2 cup fresh dill, chopped and divided
1 1/2 tsp salt
1/2 tsp coarsely ground black pepper
Optional: Four slices cheese (not low fat)

Cook broccoli in a large pot of boiling salted water until tender, about 10 minutes. Drain, transfer to a large bowl and mash coarsely with a potato masher.
Heat 3 T oil in a heavy large skillet over medium-high heat. Add leeks and sauté until tender and they just begin to change color, about 5 minutes. Add leek mixture to broccoli. Mix in almond flour. Beat eggs, parsley, dill, salt, and pepper in small bowl; stir into broccoli mixture.
Brush 11x7-inch baking dish with 1 T oil. Spread broccoli mixture evenly.
Preheat oven to 350°F. Bake kugel uncovered for 25 minutes, lay cheese slices on top and cook another 10 minutes until it is bubbling and getting a little brown on top.

I adapted this receipt from a couple of non SCD recipes I found online. It's sooooo good! The exact same recipe can be made with cauliflower in place of broccoli or a mix of both. It can be made with or without the cheese on top. Any cheese will do. I use Swiss or cheddar.
