1 1/2 cup uncooked penne pasta
9 ounces baby spinach leaves
1 pound boneless, skinless, chicken breasts, cut into bite sized pieces
1 tsp basil
28 ounce jar spaghetti sauce
14 1/2 ounce diced tomatoes, drained
2 ounces cream cheese, cubed
4 ounces mozzarella
2 Tblsp parmesan cheese
fresh basil (optional)

375. Spray 13x9 dish. Cook pasta per pkg, adding spinach to the boiling water during the last minute. Coat lg skillet with spray add the chicken and basil, and cook over medium high heat for 3 minutes. Stir in the spaghetti sauce and tomatoes and bring to a boil. Reduce to low and simmer for 3 minutes or until the chicken is done. Add the cream cheese, stirring until melted. Drain pasta mixture, and return to the pan. Add the chicken mixture and 1/2 cup of the mozzarella. Spoon mix into a prepared pan. Bake 375 20 minutes. Top with the other 1/2 cup mozzarella and the Parm. Bake an additional 3 minutes of until the cheese melts.
