1/3 cup sifted flour or 1/4 cup cornstarch
1 cup brown sugar
1/4 tsp. salt
2 cups milk, scalded
3 slightly beaten egg yolks
3 tblsps. butter
1/2 tsp. vanilla
1 baked 9" pastry shell
3 stiff-beaten egg whites
6 tblsps. sugar

Directions:
Directions:
Mix flour, sugar and salt. Gradually add milk. Cook over moderate heat, stirring constantly, until mixture thickens and boils. Cook 2 minutes; remove from heat.
Add small amount of cooked mixture to egg yolks; stir into remaining hot mixture. Cook 1 minute, stirring constantly. Remove from heat and add butter and vanilla. Cool slightly and pour into baked pastry shell. Cool.
Cover with meringue made of beaten egg whites and remaining 6 tblsps. sugar. Bake in moderate oven (350º) 12-15 minutes till browned.
