Ingredients: 1 lb. extra lean ground beef or mixture of beef and pork sausage 2 Tbsp. olive oil 1 c. coarsely chopped onion 1 c. thinly slice celery 1 Tbsp. minced jalapeno peppers, or diced chili peppers 2 cloves garlic, finely minced 1 can (24.5 oz.) diced tomatoes, undrained 1 can corn with peppers, drained (12 to 15 oz.) 1 tsp. chili powder ½ tsp. salt Dash of pepper ½ tsp. cumin 4 medium potatoes, peeled, thinly sliced (about 1½ to 2 lbs.) 2 c. (8 oz.) shredded sharp cheddar cheese (I double the cheese)

Directions:1. Grease a 9 x 13 inch baking dish. 2. Heat oven to 350º. 3. In a large skillet, heat olive oil over medium heat. 4. Add the ground beef, onion, and celery; breaking up beef with wooden spoon. Cook, stirring until beef is browned and vegetables are tender. 5. Add garlic and peppers. Cook, stirring for about a minute longer. 6. Stir in the tomatoes, optional corn with okra, chili powder, salt, peppers, and cumin. 7. In the prepared baking dish, arrange half of the sliced potatoes, then top with half of the corn and ground beef mixture and half of the cheese. 8. Repeat the layers, ending with the remaining cheese. 9. Cover tightly with foil and bake for about 1 hour and 15 minutes, or until potatoes are tender. |
