Ingredients: 6 large or 8 medium bananas, very ripe 4 eggs 2 cups sugar 3/4 cup oil 4 cups flour 1 teaspoon baking soda 2 teaspoons salt 2 teaspoons baking powder (I use the levure chimique for both the baking powder and soda) 1/2 cup walnuts, chopped (optional) 1/2 cup dark, small raisins or craisins (optional) 1/2 cup chocolate chunks or bits (optional)

Directions:Grease well and flour 2 large loaf pans, or I use sulfurized paper to prevent sticking...set aside. Peel bananas and place in large mixing bowl, mash bananas well. Add eggs, sugar, and oil, mix until well blended. In separate bowl, mix flour, baking soda, salt, and baking powder. Add to banana mixture. Mix until blended. Add nuts and mix briefly. (Over mixing causes tunnels and a coarse texture.) Pour into prepared pans. Bake at 325 degrees F. (or 160 degrees C.) for 45 to 50 minutes or until wooden toothpick inserted in center comes out clean. Makes 2 loaves. Note: Can make smaller loaves if desired, baking for a shorter amount of time. Notes: One of our favorites, especially with the optional ingredients added. I'll sometimes just freeze bananas when they get too ripe, and I'm too busy to make banana bread. When I have time, I'll pull them out the freezer, bananas, peelings and all, and make this banana bread! Sooo yummy when hot!
