1½ sheets frozen puff pastry, thawed
1 egg
salt and pepper to taste
½ cup finely grated cheese (i.e., swiss, parmesan, reggiano)

Directions:

1. Divide puff pastry into 3 equal pieces.
2. Roll out each piece on a floured surface, to 14 x 5 -inch rectangle.
3. Beat egg with salt and pepper.
4. Brush each rectangle generously with the egg mixture.
5. Sprinkle half the cheese over 1 rectangle and cover with the second rectangle.
6. Sprinkle the remaining cheese over the rectangles, and cover with the remaining rectangle.
7. Press dough (3-layers) firmly together and cut into thin strips about ¼-inch wide.*
8. Sprinkle a baking sheet with cold water.
9. Twist strips of cheese dough and place on baking sheet.
10. Refrigerate about 15 minutes.
11. Preheat oven to 400º F.
12. Bake 15 minutes or until golden.

Tasty when served with pizza sauce as a dip.


*If dough becomes too sticky or difficult to cut, refrigerate 10-15 minutes.
