1 cup of softened, or melted butter
3/4 cup granulated sugar (I use the fin sucre, much better than the regular kind)
1 cup brown sugar (I use the Vergeoise kind, makes much softer cookies)
1 tsp. vanilla
2 large eggs
2 tsps. levure chimique (combo of baking powder and soda)
1 tsp. salt
2 1/4 cups flour
1 1/2 cups oatmeal (I use Quakers)
2 Carte d'Or dark chocolate bars (100 grams each), cut up... if you like it more chocolatey, can add another 100 grams chocolate bar or use 1 ½ cups of chocolate chips or more, if you like.
1 cup walnuts, chopped coarsely
1/2 to 1 cup raisins, craisins, or cut-up dates, etc., whatever you like

Blend or beat thoroughly, the sugars, softened butter, eggs, and vanilla until smooth in consistency in a fairly large bowl. Add 1 cup of flour, sifted with the salt and levure chimique, and mix well. Then add the rest of the flour, mix well. Finally, add the oatmeal, then the chocolate pieces, the nuts, and raisins. Stir until well-blended. Scoop out with an ice cream scooper, and place balls of batter on a greased or waxed (I use sulfurized paper here in France) paper, on a cookie sheet, a little apart, so that they have room to expand, and flatten them a bit, so that they cook evenly. Bake at 190 degrees celsius for 8 to 10 minutes or until very lightly browned (better if slightly undercooked). Place on another waxed paper sheet to cool. Bon appetit!

One of our favorites.... cookies with oatmeal, raisins, and nuts are a wonderful combination, and respectfully, pretty healthy for a sweet. The large chocolate bits that you find in a cookie are especially tasty. And of course, the French make 'real' chocolate, which makes them all the better! Bon Appetit!
