6-8 med size potatoes
2 eggs
2 stalks celery
1-2 green onions (scallions)
1-2 radishes (add to taste)
½ cup sour cream
2 cups mayo (enough to make creamy)
salt and pepper
paprika

Directions:
Directions:
Boil potatoes until tender, but not mushy, around 15 minutes and boil eggs.
When cool, cut potatoes into bite size pieces and cut up eggs.
Put into large bowl.
Chop celery, green onions, cucumbers and slice the radishes into thin slices and add to bowl.
Add the sour cream and mayo (you put in more mayo than sour cream to make it creamy).

Season with salt and pepper and sprinkle top with paprika.



The amounts can vary depending on how much you are making. You can omit the sour cream
but that is the secret ingredient that makes this potato salad unique!

This is another family favorite that I grew up on and even today, when my Mom makes it, there
