1 Large Potato, peeled, freshly cooked (about 1 cup
¼ cup oil
1 large egg (at room temp)
2 cups all-purpose flour,
Extra flour for dusting work surface
1 teaspoon sea salt
1 cup water

Directions:
Directions:

1- Mash or run cooked & cooled potatoes through a food mill or ricer into a large bowl.

2 - Add oil, egg, flour, salt and water to the potatoes and combine well. (TIP If you find that the dough is dry, you can add more water, 1 tablespoon at a time, until moist. If dough is sticky, Just add a little more flour, 1 tablespoon at a time, until it's smooth.)

3 - On a floured surface, knead dough 3 or 4 minutes or until elastic. Cover dough with plastic wrap and refrigerate at least 30 minutes.

4 - Roll, cut, fill and cook pierogi with your favorite filling.
