1 tblsp. butter
1 cup thinly sliced green onions
2 cups peas, fresh are best but I have used frozen
1 tblsp. chopped mint
Zest of 1/2 lemon
Salt and Pepper to taste

Directions:
Directions:
In a large skittle, melt the butter over low heat. Add onions and 1/4 tsp. salt. Cook covered, stirrint occasionally, until tender, about 4 minutes. Stir in the peas and 1 tblsp. water. Cover and continue cooking until peas are just tender, about 3-4 minute. Remove pan from heat. Stir in the mint and lemon zest, and season with salt and pepper to taste.
