4 lb. pork roast
1 tblsp. minced garlic
1 tblsp. Essence
2 tblsps. butter
6 slices bacon

*5 tblsps. sweet paprika
1/4 cup salt
1/4 cup garlic powder
2 tblsps. oregano
2 tblsps. dried thyme
2 tblsps. onion powder
2 tblsps. freshly ground black pepper
2 tblsps. ground red pepper

**2 cups wine vinegar
1 cup lime juice
1 tblsp. Worcestershire Sauce
1 tsp. paprika
1/2 cup parsley flakes
1/4 cup olive oil
1 tsp. Essence
1/2 tsp. pepper

*Emeril's Essence: Stir all ingredients together. Store in airtight container up to 3 months. Makes 1 cup.

**Barbeque Sauce: Stir all ingredients together. Store in refrigerator. Makes 4 cups.

Rub roast with garlic and Essence. Melt butter in large skillet over medium-high heat. Add roast and cook 4-5 minutes on each side or until browned. Wrap bacon over roast. Pour 2 cups BBQ Sauce over top. Bake at 350º for 2 hours or until meat thermometer reaches 160.
