Thai Fried Rice Recipe

3 Tblsp oil
2 cloves garlic, minced
1-2 Tblsp red curry paste (Nam Prik Kaeng Ped)
1-2 fresh red chiles-minced (I omit these)
5 oz ground or shredded pork or minced chicken
3½ c cooked, cold rice
3 eggs, beaten slightly
2 Tblsp chopped shrimp (I add more)
½ c thawed frozen peas
3 Tblsp fish sauce
1 Tblsp cilantro, chopped

Heat wok. Add oil.
Add garlic and stir until fragrant.
Add curry paste and chiles. Stir over moderate heat for approximately 2-3 minutes but be careful not to burn it.
Add the pork or chicken and stir fry for 2-3 minutes.
Add the rice. Stir until the rice is colored with the paste and heated.
Make a well in the center of the rice. Add 1 Tblsp oil and the eggs and shrimp. Let it set slightly then start incorporating eggs into the rice. Stir in circular fashion with chopsticks.
Add the peas, fish sauce and chopped cilantro.
Stir to mix and cook until the peas are tender and heated throughout.

This old recipe is spicy so adjust the curry paste and chiles to your taste. I'm a wimp so I go slowly with the paste and omit the chiles.
