1 envelope quick rise yeast
2 tablespoons warm water
2 3/4 cups self rising flour
1 1/2 tablespoons sugar
1/3 cup vegetable shortening such as Crisco - chilled
1 cup cold buttermilk

(I have not tried to substitute the self rising flour for GF, but I bet it would work fine.)

Preheat oven to 400º.
Line baking sheet or cast iron skillet with parchment paper and lightly spray with nonstick cooking spray. Set aside.
In a small bowl, stir yeast and warm water together. Set aside to "proof". In a large bowl, stir all dry ingredients together.
Cut cold shortening into flour mixture until it is the size of peas. Pour in the "proofed yeast" and the buttermilk. Stir to moisten.
Roll out on to a floured surface and cut into 8 - 1 inch thick circles. Place into the prepared pan.
Brush tops with milk (to help with browning) and bake for 15-20 minutes or until puffed, golden and fully cooked.
Serve warm.

One of my first jobs out of college was at the Bedford County Agriculture Extension Office where I was a Family Living Specialist for 3 years. Basically, my job was to teach young stay at home Moms the basics of Family Living. This included, primarily nutrition but also, child care, health and creative arts (sewing, needlepoint, painting etc., etc.) I worked for about 3 years in this position until Jill was born. Then I became the stay at home Mom.

Angel Biscuits were one of the recipes that I taught Mom's how to prepare during the 70's. These are delicious but a little time consuming.
