6 Tablespoons Virgin Olive Oil
3/4 tablespoons curry powder
1 cup apple cider
1/2 teaspoon salt
1 tablespoon cider vinegar
1 pound Dry Sea Scallops (tough muscle removed)
1/4 tablespoon pepper
8 cups salad greens
1 granny smith
1/4 cup dried cranberries
1/4 cup roasted almonds

Directions:
Directions:
Heat 2 Tablespoons oil in skillet on med heat. Add curry, stir for 3 minutes. Add cider and 1/4 tablespoon salt. Bring to a boil and cook til reduced to 3/4 cup. (about 4 minutes)

Pour this in large bowl and whisk in 2 Tablespoons oil and vinegar. Reserve 1/4 cup dressing, 1/4 tablespoon salt, 1/4 tablespoon pepper, 2 tablespoons oil. Cook scallops over medium high until scallops brown, about 2-3 minutes each side.

Add salad, apple, cranberries, and almonds.

Toss to mix
