1 Large Wild Boar Roast 2-3 lb.
3 - 5 T Olive Oil
3 Potatoes - large quartered
1 ½ cups White Mushrooms (whole or halved)
2-3 cups Wild Mushrooms ** (sliced into larger chunks)
1 Onion chopped
3-5 Cloves of Garlic (whole)
Fresh Parsley
Fresh Rosemary
Fresh Thyme
1 cups Dry Cabernet Sauvignon
1 cup Chicken Stock
Chives - chopped


Directions:
Directions:
1 - Add Olive Oil to skillet & brown the roast on all sides

2 - Place browned roast into crock pot & add wine & chicken stock

3 - Add potatoes, onions, garlic & mushrooms & let cook on low for 6-8 hours

4 - Add Fresh herbs at about the 2-3 hour mark

5 - Sprinkle top of boar with some fresh chopped chives when serving



Other items that pair well with WILD BOAR: cayenne pepper, coriander leaves, cloves, cinnamon , garlic, ginger, juniper berries, lemon, onion, red chillis, rosemary, tarragon - dry red wine, dry white wine, cognac, Marsala ,cider vinegar, quince, pecorino cheese, raisins, pine nuts

** I used several varieties. Oyster, Trumpet, Portabello, Shitake, Button, chicken of the woods, Hen-of-the-wood and Forest Nameko
