Ingredients: FOR THE COOKIES - 2 sticks (1 cup) of softened butter - 1 c. of sour cream - 1¾ c. of granulated sugar - 2 eggs - 2 tsp. of vanilla extract - ½ tsp. of almond extract - 6 c. of all purpose flour - 1½ tsp. of baking powder - 1 tsp. of baking soda - ½ tsp. of salt (omit if using salted butter)
FOR THE FROSTING - 2 sticks (1 cup) of softened butter - 1 tsp. of vanilla, coconut, almond, or peppermint extract - 4 c. of powdered sugar - 5 tbsp. of milk - food coloring and sprinkles (optional)

Directions:FOR THE COOKIES 1. Preheat oven to 400º. Line a baking sheet with parchment paper and set aside. 2. In a standard mixer with a scraper/paddle attachment or in a large mixing bowl using a hand mixer, cream together the butter and sour cream until light in color and smooth. 3. Add in the sugar, eggs, vanilla extract, and almond extract. Mix until combined. 4. In a separate mixing bowl, sift together the flour, baking powder, baking soda, and salt (if using). Add the dry ingredients to the wet in three additions, mixing well after each. 5. To form cookies:using damp hands, roll the dough into 2 in. balls and place 2 in. apart on the cookie sheet. Using a flat bottomed glass dipped in water, press the cookie balls flat. 6. Bake cookies in the preheated oven for 5-7 minutes, until the cookies just begin to set up and the bottoms are lightly brown. Immediately remove from cookie sheet and let cool completely on a cooling rack before frosting.
FOR THE FROSTING 1. In a standard mixer with a scraper/paddle attachment or in a large mixing bowl using a hand mixer, cream together the butter and extract of choice until smooth. 2. Add in the powdered sugar, 1 cup at a time, mixing until smooth after each addition. Add in the milk and food color, and beat until fluffy and smooth. Spread onto cooled cookies and immediately sprinkle on sprinkles. |

Notes: This recipe makes 48 cookies, so this would be a good recipe to make for a birthday party, especially a child's. Lofthouse cookies have most likely been a part of every person's childhood. These are the sugar cookies you see in the grocery store with colored frosting and sprinkles. As a child, every time we would go to the store, my brother and I would beg my mom for these cookies. The days we were told yes were the best days of our lives. These cookies bring back fond memories from my childhood and even from my teenage years, as I still enjoy eating them.
