2 cups flour
1 tsp. soda
2 tsp. baking powder
1 tsp. salt
1 cup white sugar
1 cup brown sugar
2 TBSP. water
1 1/2 tsp. vanilla
1 cup shortening
3 cups Oatmeal
2 eggs

Directions:
Directions:
Sift flour with soda, baking powder and salt. Beat shortening until creamy, beat in sugars and eggs. Continue beating until light and fluffy. At low speed add flour, Oatmeal and coconut. Make into balls and press onto cookie sheet. Bake at 350º for 12 minutes or until golden brown. May add raisins if desired.
