4 qts. Green tomatoes
12 (more or less) yellow onions
1/2 c. Salt
1 at. Apple cider vinegar
4 lbs. dark brown sugar
2T. Mixed pickling spices

Directions:
Directions:
Slice green tomatoes and onions. Sprinkle with salt ( layer of tomatoes, layer of onions). Let stand over night., and drain in morning. Bring vinegar, sugar, and spices ( in a cloth bag) to a boil. Add tomatoes and onions, bring back to a boil and let it simmer 20 minutes. Pack in hot Ball jars and seal at once.

My sister Sally rescued this recipe ( for what to do with your abundant tomato harvest when frost hits) from our grandmother's cook Theresa. Sally's tip: sounds like it makes a ton but when she made it she only got two quarts.
