Bag of frozen tater tots
Salt and Pepper to taste
1 small to medium onion, chopped (size depends on taste)
1 green pepper, chopped
1 lb. precooked and crumbled bacon, ham or ground sausage. (Sometimes I use a combination).
8 eggs, beaten
2 C. milk (I use equal parts of milk and half & half)
3 C. Chedder or co-jack cheese, shredded or grated

Directions:

1. Evenly place tater tots in the bottom of a greased (sprayed) 9 X 13 baking pan. Bake 400º F. until tots start to brown
(about 20 minutes or so).
2. Remove from oven and sprinkle on top the salt and pepper. Next, sprinkle on top the chopped onion and green pepper.
3. Next evenly add the precooked and crumbled meat (bacon, sausage or ham).
4. Beat together the eggs, milk (half & half), and stir in the shredded cheese; slowly pour over the meat.
5. Cover with foil and bake in a 350º oven for 45 minutes; remove foil and bake an additional 30 minutes. The top will just
begin to brown around the edges.
6. Remove from oven and let set for about 5 minutes before cutting.

This casserole is so good. It is very easy to essemble (especially if you have your meat precooked). This can be made the day before which is so helpful, especially, if you are serving guests the next morning. This is the breakfast casserole that I most often use. Easy and delicious - that's for me!
