1 1/2 pounds navy beans

2 1/2 quarts boiling water

Ham Hock

1 Cup chopped Onion

1/4 cup butter

Salt and Pepper

Directions:
Directions:
Wash beans, discard any imperfect ones. Cover with cold water and soak overnight, drain. Put beans in large kettle, add boiling water and ham. Simmer 1 1/2 hours. Saute onion in butter and add to soup. Cook for 1 hour.
