3 lbs Boneless Lamb Leg
2 tbsp Olive Oil - smoked if you have it
1 pkg Island Woodfire Grill marinade seasoning (or combination of allspice, ginger,salt,chili pepper,sugar,garlic)
1/2 pkg Jalepeno Bacon
Small Onion & Chives - chopped
Garlic bulb (or as many cloves you can stand) - also chopped
1/2 cup Craisins
Cooking Twine
French Fried Jalepenos
Penzy's Mural of Flavor seasoning
(or combo of onion,garlic,citrus peel)

Cut open lamb leg with 2 inch slices until it lies flat. Rub inside with oil olive, then rub in Island Woodfire seasoning. Sauté bacon and onion, mix in chives and chopped garlic, then spread on to lamb. Sprinkle in a handful of Craisins.
Hold lamb closed and tie with cooking twine to keep closed while in oven.
Rub remaining Island Woodfire seasoning on outside of lamb. Crush french fried jalepenos and mix in tablespoon of Mural seasoning, then press onto out side of lamb. Set stuffed and crusted lamb leg in roast pan on rack. Cook 30 minutes at 400º. Reduce oven temp to 350º and cook another 30 mins. Take internal temp - it should be at least 130º for medium rare.
