1 2lb.pkg. fresh baby carrots, or 12-14 reg. carrots
olive oil to drizzle & coat carrots ( 3-4 T.)
salt to taste
fresh ground pepper to taste
2 to 2 1/2 T. fresh or dried dill

Preheat oven to 400ºF
Cut large or thick carrots in half lengthwise, then cut into 2-3 in. chunks, Can leave baby carrots whole, or cut lengthwise. Put into a bowl and toss with olive oil, salt & pepper.Turn onto a sheet pan, covered in foil (for easy clean up) Spread out and cook for 20-25 minutes, until slightly browned and tender.
Remove and put into a serving dish and toss with fresh dill. Adjust seasonings & serve.
