2-3 bunches of escarole
3 links of Italian sausage
olive oil
2 cloves of garlic
1 onion
1-2 cans of red kidney beans
1 container chicken broth (you can add more if you want it more soupy)
chili flakes

Directions:
Directions:
In a large pot, sauté the onions, garlic and sausage in olive oil (7-8 minutes).

Remove sausage and set aside.

Wash and cut the escarole and add to the pot, cook down approx. 2-3 minutes and then add
the broth and the beans.

You can cut up the sausage and add back into pot or eat sausage on it's own.

Simmer for 15-20 minutes.

Serve in bowl with parmesan cheese, chili flakes and a fresh slice of Italian bread!
