2 – 3 Tbsp coconut oil
1 cup chopped onion
3 cloves garlic, minced
1½ lb ground beef
1½ Tbsp curry powder
2¼ tsp salt
⅛ tsp pepper
⅛ tsp cinnamon
⅛ tsp ginger
⅛ tsp turmeric
2½ – 3 cups diced tomatoes (or 1 14 oz cans)
1/2 head of cauliflower
2½ – 3 cups fresh green beans

Directions:
Directions:
Melt oil or butter in a large pan.
Add onion and garlic
Cook until onion softens and garlic begins to brown
Add meat and cook thoroughly.
Add curry, salt and spices. Stir well.
Dice potatoes.
Add cauliflower, tomatoes, and green beans to the pan.
Bring to a simmering boil. Reduce heat, cover and simmer for 25 minutes
