1 Large potato (egg plant, cauliflower, brocoolini, etc)
1 small bag of spinach
2 cups gram flour (chick pea flour)
1 medium onion
2 tbsp. fenugreek leaves (methi leaves)
1/2 tsp. carom seeds (ajwaih)
1/2 tsp. baking soda
1 tsp. salt (to taste)
1 tsp. Red chili powder/flakes
1 small green chili (to taste)
1 tsp. whole coriander
1/4 cup yogurt

Oil for frying

Directions:
Directions:
Combine all ingredients and spices in bowl, add water to make a thick mixture.
Fry in hot oil in the form of balls

Serve with Tamarin sauce:
1. Soak 1 bag dried tamarin overnight (in about 3 cups water). Do not drain.
2. Add more water, massaging flavours out of tamarin (throwing away seeds - leaving pulp juice)
3. Blend and add 1 Tbsp white vinegar, 2 cups sugar, pinch of dried red pepper flakes.
Keeps in fridge for a long time.
