4 boneless skinless breast halves
1 cup coarsely chopped broccoli
1 cup fresh spinach
2 roma tomatoes, chopped
4 ounce feta
8 ounce mozzarella, divided

Directions:
Directions:
350. Mix broccoli, spinach, tomatoes in a bowl and set aside. Cover chicken breasts with plastic and flatten with a rolling pin. Evenly distribute ingredients from bowl into the center of the breasts. Sprinkle equal amounts of feta and 1/2 mozzarella on top of the broccoli mix. Wrap breast tightly around filling and secure with toothpick. Sprinkle rest of mozzarella on top of each breast and place on sheet or pan. Bake for 30-35 minutes until chicken is thoroughly cooked.

I had tasted chicken spinoccoli at the Chicago Uno with Joyce and had it again with Brandon one of the times he and I ate while Mom was in Vestal Nursing Home. I made this for he and I, once I found this recipe and gave a copy of it to Mom's roommate, Angie.
