2 eggs
1 teaspoon water, milk or cream
Salt and pepper to taste
1 teaspoon unsalted butter
1 slice bread, toasted as desired.

Directions:
Directions:
Heat a small heavy skillet over medium heat. Break the eggs into a small deep bowl. Add the water (or milk or cream), salt and pepper to taste, and beat well with a fork. Once the skillet is hot, add the butter. Once the butter has melted and starts to sizzle, pour in the beaten eggs. Stir with your fork until cooked to your liking. Spoon onto a serving plate alongside the toast.

OPTIONS: Add minced garlic and/or chopped green onion.
