20 8" tortillas

Meat:
3 tbsp oil
5 cups shredded chicken (either use canned OR slow-cook bone-in chicken breasts and shred meat yourself)
3 pkg taco seasoning (6 tbsp)
2 cups water

Sauce:
3 cups cottage cheese
1 cup sour cream
2 cups shredded monterey jack or cheddar cheese
4 10-oz cans enchilada sauce

Directions:
Directions:
Heat chicken, taco seasoning, and water until most of the liquid has evaporated.

Mix together cottage cheese, sour cream, and shredded cheese. Use one can of enchilada sauce to cover bottom of dish.

Spoon about 3-4 tbsp meat and 3 tbsp cheese mixture onto tortilla. Roll up, place in dish. Cover with enchilada sauce and sprinkle with shredded cheese.

Bake uncovered at 350º 20-30 minutes.
