4 skinless boneless chicken breasts (about 1-1/2 lbs.)
All-purpose flour, for dredging
3 tbsp. olive oil
3 tbsp. butter
1/2 cup Marsala wine
1/2 cup cooking sherry
8 ounce can mushrooms

Directions:
Directions:
Dredge the chicken breasts in flour. Melt the butter and oil in skillet. Once melted, add the chicken and brown on both sides. Once browned, add the Marsala wine and sherry. Cover and simmer for 15 minutes. The last 5 minutes of cooking add the mushrooms. Fresh mushrooms can be substituted for canned. If using fresh mushrooms, put them in the pan for the full 15 minutes of cooking with the chicken, Marsala wine and sherry.
