1 cup butter, softened or shortening
1½ cups sugar
3 eggs
1½ cups prepared mincemeat, drained
3¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
1 cup chopped pecans or walnuts

Directions:

1. Preheat oven to 350º. Grease cookie sheets.
2. Cream shortening (butter), sugar, and eggs together, then beat in vanilla.
Sift the flour, salt, and baking soda together, and add to the shortening mixture.
Mix well until well blended. Stir in the nuts and mincemeat and mix well.
Drop by teaspoonfuls on the cookie sheet
3. Bake 10 - 15 minutes until light brown.

You can add in more mincemeat or other spices to change the flavor.

There are many variations, but this one was made by sister-in-law of
Sister Kathleen McCuistion. Some recipes call for only 1 egg & twice as much mincemeat.
