Ingredients: Crust & Topping: ⅓ c. margarine ⅓ c. brown sugar 1 c. flour ½ c. nuts, finely chopped (walnuts work great; nuts add flavor and crunch)
Filling: ¼ c. sugar 8 oz. pkg cream cheese 1 egg 2 tbsp. milk 1 tbsp. lemon juice ½ tsp. vanilla

Directions:Crumb Crust & Topping: Cream together margarine and brown sugar. Stir in flour and nuts. Set aside 1 cup for topping. Press remainder into the bottom of an 8-inch square pan. Bake at 350º for 12-15 minutes until lightly browned. (Less for a dark pan)
Filling: Blend cream cheese and sugar together until smooth. Add egg, milk, lemon juice and vanilla. Beat well with mixer. Spread mixture over baked crust. Sprinkle with reserved topping. Bake at 350º for 25 minutes.
Cool, cut into squares and serve; store any leftovers in the refrigerator. |

Notes: These cream cheese squares are absolutely delightful! Anytime Mom made these, we hovered around until they were cool enough that she'd allow us to take one. They never lasted long enough to see the refrigerator.
They would also work great as light little individual "cheesecake" servings in miniature muffin cups or tins for parties - with various toppings. They are better than cheesecake, in my opinion!
