1/2 - 3/4 C olive oil
2 garlic cloves
1 C parmesan
salt & pepper to taste
2 T. lemon juice
2 T. mayo or sour cream
2 tsp. anchovy paste
2 tsp. dijon
2 tsp. worchestershire sauce
2 tsp. Tabasco

Puree all of the ingredients in a blender until smooth. This should dress approximately five romaine hearts.

This is a recipe from my cousin Carmella - who knew her business in the kitchen! It's the best homemade Ceasar that I've found and it's super easy. Anchovy paste is the only ingredient that is a little odd, but it adds so much and if you buy a tube, you'll have it for a long time! One of the Neukom's favorite "go-to" meals is chicken Caesar salad and grill bread!
