2 C Cornmeal
1 C Cracklins (Fried pork skin or chunks from frying up ends and pieces works ok too)
1 egg
1 t Salt
Hot water
Maybe a little bacon grease--just a smidge, a T or so--for more flavor in the bottom of your skillet

Directions:
Add enough hot water to the egg and corn meal to make into a stiff dough, thick enough to shape into small loaves or just pat it into a cast iron skillet. Crush cracklins into tiny pieces and add to dough. Bake in moderately slow to moderate oven (about 350°) for 45 mins. to an hour.

This recipe was in Grandma Ida Smith's recipe box. She had noted tha Sarah said the Caddo people ate this in the stockade.
