5-6 firm plum tomatoes
1 clove garlic, minced or crushed
1 T extra virgin olive oil
2 t balsamic vinegar
6-8 fresh basil leaves, finely sliced
1 stalk of green onion, very finely chopped
1 t kosher salt
1/2 t freshly ground black pepper
1 French bread baguette
1/4 cup olive oil

Directions:
Directions:
1. Make a shallow X-cut at the tip of each tomato; drop them into boiling for about a minute. Remove and cool; peel.
2. Chop tomatoes into very small pieces and place in colander to drain liquid.
3. In small bowl, combine olive oil, vinegar, basil leaves, green onion, and crushed garlic. Stir well.
4. Add tomatoes and mix well.
5. Allow to sit in bowl while preparing baguette slices.
6. Preheat oven to 450º
7. Slice baguette into 1/2-inch slices.
8. Brush with olive oil and place oiled-side down on baking sheet.
9. Bake on top rack in preheated oven about 4-5 minutes on each side until crisp through (Watch carefully to prevent burning.)
10. Before serving, drain liquid from tomato mixture.
11. To serve, spoon tomato mixture on crisp bread. (Don't do this more than a few minutes before serving so they won't be soggy.
12. Enjoy!
