Lemon-Mustard Sauce:
1 tablespoon olive oil
2 tablespoons finely chopped shallot
2/3 cup sour cream
1/3 cup Dijon-style mustard
1 tablespoon lemon juice
1 tablespoon chopped fresh dill
1 teaspoon honey
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Corned Beef
1 pkg corned beef (4#) including pickling spices
1 large onion, diced
2T crushed garlic
1 can/bottle of Guiness 12 oz
1/3 c brown sugar
2 T honey Dijon mustard
2 T Worcestershire sauce
1 t black pepper
If packet of seasoning is not included with corned beef, substitute 1 1/4 t pickling spice

Directions:
Directions:
Place corned beef fatty side in the slow cooker and cover with picling spices, ojion, garlic and Guiness Set on low for 10-11 hours
Once the beef is done, remove it from the slow cooker, place in a baking dish and set aside.
Strain the liquid to remove any solids and place the liquid in a large sauce pan, whisk in the remaining ingredients and bting to a boil over high heat.
Preheat the oven to 400"
Reduce the heat to medium-low and simmer for 20 minutes
Pour the sauce on top of the beef and bake in the oven for 15 minutes
Serve hot with the Lemon Mustard sauce
