2 tbs olive oil
2 tsp fresh chopped thyme
1 tsp light brown sugar
1/4 tsp kosher salt
1/4 tsp freshly ground black pepper
1 lb small, multicolored carrots, trimmed

1. Preheat over to 400º
2. Combine all ingredients in a bowl; toss
3. Spread carrot mixture on a foil lined baking sheet.
4. Bake for 20 min or until tender and caramelized, stirring once after 20 min.
