4 LBS BEEF BONELESS IE BLADE OR CHUCK ROAST


1/3 BOTTLE LIQUID SMOKE





1 C KETCHUP
1 TSP CHILI POWDER
1 C BROWN SUGAR
1/8 C WORCESTERSHIRE SAUCE
1 C WATER
1 TSP CELERY SEED

PUT ROAST ON RACK IN A ROASTER. POUR 1/3 BOTTLE OF LIQUID SMOKE OVER IT. COVER & COOK FOR 3 HOURS AT 325 DEGREES

REMOVE FROM ROASTER AND REFRIGERATE OVER NIGHT.
NEXT DAY SLICE MEAT THINLY AND LAYER WITH SAUCE IN A 9 X 13 PAN ( NOT ALUMINUM)
COOK COVERED FOR 1 HOUR AT 350 DEGREES.

USE 1/2 LB. PER PERSON AS A GUAGE FOR HOW LARGE A ROAST YOU NEED. ADJUST AMOUNT OF SAUCE ACCORDINGLY.
