¼ cup milk
¼ cup vegetable oil
2 large eggs
1 (15.2- oz.) package cinnamon streusel muffin mix
½ teaspoon cinnamon
1 8-oz. can crushed pineapple in juice
¾ cup grated Granny Smith apple
¾ cup shredded carrots
¾ cup chopped toasted pecans
½ cup raisins
Paper baking cup liners
Vegetable cooking spray
1 cup powdered sugar (optional)
½ teaspoon lemon rind (optional)
1 to 2 Tablespoons lemon juice (optional)

1. Preheat oven to 425º F.
2. Whisk together first 3 ingredients until blended.
3. Remove streusel packet from muffin mix package, and reserve .
4. Open contents of muffin mix packet & place in a large bowl; add cinnamon and stir together.
5. Make a well in the center of mixture and add egg mixture, pineapple, and next 4 ingredients,
stirring just until moistened.
6. Place baking cups liners in muffin pans. Spray with cooking spray (Pam).
7. Spoon batter into baking cups filing ⅔ full.
8. Sprinkle evenly with reserved streusel mix packet.
9. Bake for 18-23 minutes or until golden. Cool on wire racks.
10. Stir together the powdered sugar, lemon rind, and lemon juice until smooth.
11. Drizzle glaze over tops of muffins, if desired.
