Ingredients: 3 cups dried wide noodles 3 cups broccoli spears (12-oz.) ½ cup light dairy sour cream 1½ teaspoon prepared horseradish ½ teaspoon snipped fresh dill (if not available, use dried dill weed) 1 pound beef ribeye steak 1 small onion, cut into ½-inch slices 1 clove garlic, minced 1 Tablespoon cooking oil 4 teaspoons flour ½ teaspoon pepper 1 14½-oz can beef broth 3 Tablespoons tomato paste 1 teaspoon Worcestershire sauce

Directions:1. Cook noodles according to pkg. directions, adding broccoli the last 5 minutes of cooking; 2. Drain noodles and broccoli and keep warm. 3. In a small serving bowl, stir together the sour cream, horseradish & dill; cover & chill. 4. Trim fat from beef and cut into bite-size strips. 5. In a large skillet cook half of the beef, onion and garlic in hot oil until onion is tender and beef is done as desired. Remove from skillet. 6. Add remaining beef and cook and stir until beef is done as desired. 7 Return all meat to skillet; sprinkle flour and pepper over meat. Stir to coat. 8. Stir in broth, tomato paste and Worcestershire sauce. 9. Cook & stir until thickened & bubbly; continue cooking for an additional 1 minute. 10. Divide noodle-broccoli mixture among 4 bowls; Spoon beef mixture on top of noodle mixture. 11. Top with a spoon or two of the horseradish-sour cream mixture. |
