75 small pickles
2 Tablespoons salt
Water

3 Tablespoons Alum
Boiling water

7 cups cider vinegar
8 cups sugar
½ oz. celery seeds
1-oz. cinnamon sticks
Green food coloring
1 cup sugar

Directions:
Directions:
1. Wash pickles and place in a crock, add 2 Tbsp. salt and water to cover pickles.
2. Place in a cool place and cover with a towel.
3. Each day, mix pickles with your hands.

Day 8: Drain pickles and cover with boiling water.
Day 9: Drain pickles and cover with boiling water mixed with 3 Tablespoons of Alum.
Day 10: Drain and cover with boiling water.
Day 11: Drain and cut each pickle into desired shapes. (slices or spears, or ?
Combine cider vinegar, sugar, celery seed, and cinnamon sticks. Mix cold and
pour over pickles. Some people add food coloring now - or wait to day 15.
Day 12: Drain liquid into a pan and bring syrup to a boil. Pour this over pickles.
Day 13: Drain syrup into a pan and bring to a boil, adding 1 cup sugar. Pour over pickles.
Day 14: Drain liquid into a pan and bring to a boil. Pour this over pickles.
Day 15: Drain liquid into a pan and bring syrup to a boil. Add green food coloring.
Pack pickles into hot pint jars, cover with syrup and seal. Process in hot water bath.
