2½ cups shredded fresh beets
1 cup chopped carrots
1 medium onion, chopped
3 cups water
2 teaspoon salt
⅛ teaspoon pepper

2 cups beef broth
1 cup cabbage, shredded
1 Tablespoon lemon juice
½ cup sour cream
1 teaspoon salt & ¼ teaspoon pepper

Directions:
Directions:
1. Combine the first 6 ingredients (beets, carrots, onion, water, salt, pepper) in soup pot. Cover.
2. Cook until tender, over medium-high - medium temperature, approximately 20-30 minutes.
3. Add beef broth and shredded cabbage to soup pot. Cook, uncovered about 15-20 minutes.
4. Stir frequently and cook until cabbage is tender also.
5. Stir in butter and lemon juice.
6. Spoon into soup bowls and top off with tablespoon of sour cream.
7. Serve warm.
