ROASTED LAMB

4-6 pound boneless leg of lamb roast, tied with butcher's twine
Kosher salt
Black pepper, freshly ground
Canola Oil

SWEET & SOUR MINT GLAZE

½ cup Dijon mustard
½ cup honey
¼ cup red wine vinegar
8 fresh mint leaves, finely chopped (or use 2 Tablespoons dried mint leaves
Kosher salt & freshly ground black pepper

ROAST LAMB

1. Remove lamb from the refrigerator 30 minutes before cooking.
2. Preheat oven to 350º F.
3. Season the entire lamb liberally with salt and pepper.
4. Heat ¼ cup canola oil in a roasting pan over 2 burners until it begins to shimmer.
5. Put the lamb in, top-side down and cook, without touching, until golden brown & crust has formed,
about 5 minutes. Continue turning and browning each side.
6. Transfer pan and lamb to oven and roast until center of roast reads 130º F. (this is medium-rare).
50-90 minutes, depending on size of roast.
7. Remove roast from pan and let rest on cutting board for 10 minutes before slicing.

SWEET & SOUR GLAZE

1. Whisk together the mustard, honey and vinegar in a medium bowl.
2. Season with salt and pepper and then fold in mint.
3. Set aside and let it sit at room temperature to allow the flavors to meld.

This is Bobby Flay's recipe that I used for Easter this year.Hee had prepared it on the TODAY show and it was loved by all staff. I served the Sweet & Sour Glaze on the side allowing family members to add it as desired. Everyone liked it! Great addition - mint flavored sauce. Try it!
