1/4 lbs Roquefort cheese
1 tsp salt
1 tsp Worcestershire
1/8 tsp pepper
8 lamb 2-rib rib chops each cut about 2 1/2 in thick (I have also made with beef tenderloin steaks)
1 10oz can condensed consommé, undiluted

Directions:
Directions:
Preheat oven to 325º. Stir and mash Roquefort, salt, Worcestershire and pepper until mixed.Trim chops, leaving thin layer of fat; over fat sides, to within about 1 inch of both ends, spread some Roquefort mixture. (if using tenderloin just spread on top of steak). Set chops on bones in 12 by 8 baking dish; add consommé. Bake 50 minutes or until desired doneness. Juice is amazing! I serve with mashed potatoes.
