Ingredients: French baguette, long diced tomatoes minced garlic in olive oil kosher salt basil leaves, fresh - around 10 leaves garlic paste in the tube

Directions:Slice baguette bread into 1/4 inch slices. Use pastry brush and brush each slice lightly with a little olive oil (brush only the top sides of the bread) and then brush each slice with a dab of the garlic paste using a butter knife. Preheat oven to 400º and roast the bread slices for about 8-10 minutes... just until slightly toasted and crisp. Set aside, let cool. Topping: open can of diced tomatoes and pour into colander and let all the juice drain out for about 10 minutes or so. Put diced tomatoes into a bowl and add about 1 tablespoon minced garlic, 2 tablespoons olive oil, 1 teaspoon kosher salt (or to taste)...add more or less of these ingredients to taste. Stack basil leaves and slice into a chiffonade ... add to tomatoes. Once topping is assembled, cover and let stand in fridge for at least a few hours before topping your bread slices with it... this lets the flavors marry nicely. |
