2-3 lbs sirloin or round steak
1 tbsp butter or olive oil
1 thinly sliced onion
1 qt tomato juice
1 pkg onion soup mix
8-10 peeled carrots

Directions:
Directions:
Cut steak into 4-6 oz pieces. Melt butter or heat oil in skillet over medium high heat and brown steak pieces on both sides. Place in roasting pan and cover with onion slices. Pour juice in skillet and scrape up browned bits from bottom of skillet. Add onion soup mix and bring to a boil. Pour mixture over steak and onions. Cover roaster and bake at 350º for 3-4 hours. Halfway through, add carrots and continue baking.
